VINEYARD CHARACTERISTICS

Location of the vineyards Merlot expresses itself best on heavy soils with high clay content, located in early-ripening areas that ensure sun exposure for the grape clusters during maturation for numerous hours. This way, proper ripening of the grapes is always achieved, resulting in more expressive wines.
Grape variety used 100% Merlot.
Training system The Trentino Pergola is often used, but very good results are also obtained from row training systems (Guyot and Spurred Cordon).

VINIFICATION AND AGEING

Harvest Careful, timely thinning ensures that grape yields per unit of surface area are within the limits established by the production standards. The harvest takes place around mid-September, selecting the ripest, healthiest bunches.
VinificationTraditional red wine vinification with immediate separation from the stems, crushing of the grapes, and alcoholic fermentation in maceration on the skins, typically in stainless steel tanks for a more or less prolonged time depending on the vintage. This is followed by malolactic fermentation and partial clarification through wine racking.
Ageing Wine maturation can continue in oak barrels, as well as in stainless steel tanks.

ORGANOLEPTIC CHARACTERISTICS

Colour Fairly deep ruby red.
Aroma Complex and lingering with fruity notes (small fruits like raspberry and blueberry in particular) accompanied by pleasant spicy and grassy scents (green pepper) consistent with the varietal characteristics.
Flavour Full, plush, pleasing to drink. It has a pleasantly tart aftertaste and flavours that linger in the mouth.

• Meat-based second courses, particularly grilled meats

SERVING TEMPERATURE

Serve at 18 °C (64 °F), preferably after a light aeration.

STORAGE CONDITIONS

Keep in a cool place, away from light and heat sources. Store bottles horizontally.

AGEING POTENTIAL

Wine to be consumed immediately, but can evolve positively for up to 3 years.
